Starbucks’ new Lime-Frozed Coconut Bar is a delectable bakery treat featuring chewy coconut, oatmeal and mini white chocolate chips topped with lime frosting, drizzle of white icing and some coconut shavings. This delectable treat will be available year-round at participating locations nationwide.

This recipe is a healthier take on the classic Starbucks treat with an irresistibly chewy base made of rolled oats, almond flour, finely pulsed white chocolate chips and coconut. The lime icing takes only 3 ingredients to make – perfect for any summer gathering!

Ingredients You’ll Need for the Base

In a large bowl, combine oats, sugar and ground almonds. Blend until it resembles coarse crumbs when spread evenly in an ungreased 13×9-inch baking pan. Bake for 16-18 minutes or until edges are lightly browned. Cool completely before frosting and cutting into bars.

To make the frosting, cream butter and 1 1/4 cups of confectioner’s sugar with either a hand mixer or stand mixer until fluffy. Stir in lime juice, lime zest and 1 teaspoon of half and half until you achieve your desired consistency.

Add some zest to the frosting by adding lime green food coloring or a drop of yellow food coloring. You may also reduce the sweetness by using less powdered sugar.
