Katie Lee is a country girl with a gift for turning fresh ingredients into mouthwatering dishes, most notably cauliflower pizza crust, killer cauliflower fried rice and an alfredo sauce made out of cauliflower florets. But her latest creation – meatless cauliflower tacos! These flavorful treats were inspired out of necessity when Katie realized one evening that all she had for dinner was cauliflower and tortillas; with her creative problem-solving skills in play she transformed these simple vegetables into an irresistibly satisfying meal that will delight all who try it.
To make these easy cauliflower tacos, first cut up a head of cauliflower into small florets using either a knife or food processor. Combine the cauliflower florets with avocado oil, garlic, chili powder, cumin, smoked paprika smoked paprika salt pepper. Combine again after tossing, before tossing onto baking sheet for roasting in oven. While waiting, prep remaining lime, cilantro shredded purple cabbage avocado before filling your taco shells.
